Line a baking sheet with parchment paper and set aside.
Add crisp rice cereal to a large bowl. Set aside.
In a medium microwave-safe bowl, add honey and peanut butter. Place in microwave on high for 1 minute. Carefully remove from microwave and whisk together until honey and peanut butter combine and become smooth.
Pour honey and peanut butter mixture over cereal; add 1/4 c. of chocolate chips.
Spray two tablespoons with non-stick spray. Scoop a tablespoon of cereal mixture onto one spoon and with the other spoon, drop onto prepared baking sheet.
Drizzle with melted chocolate chips, if desired. To melt the chips, put remaining ½ c. in microwave-safe bowl and microwave on low setting until melted.
